COURSE OVERVIEW:
Upon completion of the program, you will acquire the knowledge and skills in making standard or complex Japanese cuisine that requires a high level of attention to detail and complexity in techniques.
This includes specialized skills for you to perform your job roles effectively & efficiently where Japanese Cuisine making is required, as well as to adapt to evolving industry with changing trends and appetites of Singapore consumers.
The skills have also been carefully selected to promote the development or enhancement of horizontal skills for mobility within the F&B industry
- Understand the recipes and methods of preparing different types of specialty cuisine dishes and prepare mushimono.
- Understand the artistic balance of complementary flavours, colours, shapes and textures in garnishes, food product and plate and prepare donburi.
- Understand the methods of presenting finished products and prepare nabemono
- Understand the methods of assessing suitable colour, height, shape and texture in finished products and prepare complex sushi.
Day 1: Theory (9am-6pm)
Day 2: Chawanmushi and Ponzu Tofu
Day 3: Japanese Curry and Kaminabe
Day 4: Mango Maki, Dragon Maki, and Sushi Cake
Day 5: Assessment Module 2 including E-Learning.
In this Japanese Cuisine Preparation course, you will learn the 6 Dishes + 1 Signature Dish (Sushi Cake) shown below
ENTRY REQUIREMENTS
- Age 21 and above
- Have basic knowledge and experience of Japanese cuisine preparation or completed standard Japanese cuisine preparation course (Level 1 or equivalent)
- Have developed Listening and peaking of Basic English – At least Level 2 in Workplace Literacy & Numeracy Level(listening/speaking and reading/ writing).
