Course Overview
Learners will acquire the knowledge and abilities in preparing intermediate level pastry products that require some level of attention to details and complexity in techniques. This includes both the specialized and soft skills for them to perform their job roles effectively and efficiently, as well as adapt to evolving industry with the changing trends and appetites of consumers in Singapore. These skills have also been carefully selected to promote the development and enhancement of horizontal skills for mobility within the industry

Learning Objectives
- Understand the methods of making meringues, considerations for the preparation of macarons and the preparation of macarons.
- Understand the techniques for preparation of modern entremets and tarts using suitable fillings, as well as prepare basic entremets and tarts.
- Develop ice cream recipes and demonstrate the methods to prepare ice creams and frozen desserts.
- Understand how temperature can impact the flavours of hot and cold desserts, and the making of hot and cold
desserts . - Understand how laminated dough process works, the effects of different ingredients on the baked quality of puff pastry and yeast-raised dough products, as well as make puff pastry products
- Understand the fermentation process for yeast-raised pastry products and make yeast-raised pastries
Entry Requirements
- Age 21 and above
- Education level: Primary education
- Learners have attained competency in Basic Pastry Preparation (Level 2) or have experience in preparing basic pastry products
- Workplace Literacy & Numeracy level: At least level 2 (listening/ speaking and reading/writing)
Course Fees (with GST)
- Singaporeans 40 years old and above: $838.50
- All PRs, LTVP+ & Singaporeans aged 21 – 39 years old: $1,268.50
- Full Course Fee: $2,343.50
Note:
- Company-sponsored – Absentee Payroll applicable ($4.50 per hour)
- SkillsFuture Credit is eligible for Singapore Citizens aged 25 and above.

- Trainees are entitled to the training grant when they meet 75% of the training attendance and pass the requisite assessment.
